What We Ate - 14/11 - 20/11

In the box this week

Sprouts, potatoes, savoy cabbage, carrots, tomatoes, onions, squash and red peppers.

Thursday, the remaining disappointing chilli, much better the next day!

On Friday we were both just so tired and worn out we treated ourselves to a trip to the chippery! Everyone in Dan's office had been for chips that lunchtime, he missed out as he'd been in a meeting so we made up for it. Such a delicious Friday night treat.

I didn't have anything on Saturday for one reason and another, I did have an Oatly hot chocolate using the orange Choc Shot though!

We had a roast veg risotto on Sunday, in front on the tv no less! Burnley goalkeeper Nick Pope made his competitive debut for England so we didn't want to miss it. This had mushrooms, squash, onions and something else. Looks a bit grim, tastes very good.

In the run up to the start of the new year, and because of skipped meals, chips and other less than healthy things I made a start by eating some healthy lunch on Monday. The best approach for me with habits is to piggyback one thing onto another. So eating more during the day should help to reduce the desire to snack.

Soup! Onion, squash and carrot with some red lentils and a bit of harissa, I had this with a smallish houmous and tomato sandwich.

I'm not a fruit eater but hope to nudge myself in the right direction by putting some easy peelers in my favourite Pyrex bowl, I did eat two after my soup because I just can't get enough of orange food! There's nothing else blue in the kitchen so the bowl looks a bit odd, but on the other hand it stands out!

It turned colder on Monday so I cobbled together a mushroom and lentil stew in a very peppery sauce, ideal with some skin on mash, extra carrots and cabbage.

My energy and enthusiasm didn't last and by Tuesday we were back to eating like small children

So on Wednesday, even though I was home a bit later I made a small amount of effort with our evening meal

Peppers stuffed with a tin of chilli beans, bulghur with roast squash, mushrooms, onion and tomatoes plus pesto. The chilli beans were fine, not great, but together it worked well and it helped to slightly empty the fridge. This week has been light on veg so I'll have to get some cooking done!
